Description

3 medium overripe bananas, peels removed

2 large eggs

2 cups rolled oats

1 tsp baking soda

3 tbsp maple syrup (optional)

1/2 cup chocolate chips (optional)

1/3 cup chopped walnuts (optional)

1 tsp vanilla extract (optional)

1/2 tsp ground cinnamon (optional)


Instructions

1. Preheat your oven to 350°F (175°C). Line an 8 x 4 inch (20 x 10 cm) loaf pan with parchment paper, making sure to leave some overhang on the sides.

2. Place your peeled, super overripe bananas into a blender or food processor.

3. Crack the 2 large eggs into the blender. Add the 2 cups of wholesome rolled oats and the 1 teaspoon of baking soda. If using maple syrup, vanilla extract, or cinnamon, add those now.

4. Blend on high speed until you have a smooth, well-combined batter. It’s okay if you see tiny flecks of oats; they should be ground enough to look like coarse flour.

5. If adding mix-ins like chocolate chips or chopped nuts, gently stir them into the batter with a spoon or spatula.

6. Pour the batter into your prepared loaf pan. Give the pan a gentle tap on your counter to settle the batter. You can sprinkle a few extra walnuts or chocolate chips on top for a pretty finish.

7. Bake for about 35-45 minutes. The banana bread is ready when a toothpick inserted into the center comes out mostly clean (a few moist crumbs are fine), and when you gently press on the surface, it springs back. The top should be a beautiful golden brown.

8. Let the bread cool in the pan on a wire rack for about 10-15 minutes.

9. Use the parchment paper overhang to carefully lift the entire loaf out of the pan and transfer it directly onto the wire rack to cool completely.
