Ingredients
- 1 cup fresh lemon juice
- 6 cups cold water
- ¼ cup dragon fruit pureed
- Simple Syrup:
- 1 cup sugar

1. Start by making the simple syrup: In a medium saucepan, combine the 1 cup of sugar with 2 cups of water. Place the saucepan over medium heat, whisking constantly until all the sugar has completely dissolved. Once dissolved, remove the saucepan from the heat and set it aside to cool completely. You can even pop it in the fridge to speed up the cooling process.
2. Prepare your lemons: Take about 6 fresh lemons and juice them. You’re aiming for exactly 1 cup of fresh lemon juice. Using a citrus juicer makes this quick and easy. Strain the juice if you prefer your dragon fruit lemonade without pulp.
3. Puree the dragon fruit: For that signature vibrant color and subtle flavor, take about half of a medium-sized fresh dragon fruit (or equivalent frozen cubes) and puree it. You can use a small blender or food processor. Blend until it’s a smooth, chunk-free liquid, resulting in roughly ¼ cup of pureed dragon fruit.
4. Combine the ingredients: Once your simple syrup is fully cooled, pour it into a large pitcher (at least 2-quart capacity).
5. Add the zest and color: To the pitcher, add the freshly squeezed lemon juice and the pureed dragon fruit. Give it a gentle stir.
6. Dilute to perfection: Now, pour in the 6 cups of cold water. Stir everything together thoroughly until all the ingredients are well combined and the dragon fruit gives the whole pitcher a uniform, beautiful pink color.
7. Chill for optimal refreshment: For the best taste and a truly refreshing Dragon fruit lemonade drink, cover the pitcher and refrigerate it for at least 1-2 hours. This chilling time allows the flavors to deepen and meld together beautifully.
