Create a vibrant, refreshing pineapple dragonfruit lemonade. This easy homemade recipe blends tropical fruit with zesty lemon for a perfect summer drink.
Ingredients
1 cup water
1 cup granulated sugar
1 cup freshly squeezed lemon juice
2 cups fresh pineapple chunks
1 cup fresh dragonfruit chunks
4–5 cups cold water

Instructions
1. Make the Simple Syrup: In a small saucepan, combine water and sugar over medium heat. Stir constantly until the sugar is completely dissolved and the mixture is clear. Remove from heat and let it cool completely.
2. Prepare the Pineapple and Dragonfruit: Peel and chop the pineapple into chunks. Peel and chop the dragonfruit into chunks.
3. Blend the Pineapple and Dragonfruit Puree: In a blender, combine the pineapple chunks, dragonfruit chunks, and 1 cup of cold water. Blend until smooth.
4. Strain the Puree (for a Smooth Finish): Place a fine-mesh sieve or cheesecloth over a large bowl. Pour the pineapple-dragonfruit puree through the sieve/cheesecloth, pressing down with a spoon to extract as much juice as possible. Discard the pulp.
5. Assemble the Lemonade Base: In a large pitcher, combine the strained pineapple-dragonfruit juice, fresh lemon juice, and the cooled simple syrup.
6. Dilute and Adjust: Add 3 cups of cold water to the pitcher and stir well to combine all the delicious elements. Taste and adjust the sweetness and tartness as needed. Add more simple syrup if it’s too tart, or more lemon juice if it’s too sweet. Add more water if the flavor is too strong.
7. Chill and Serve: Add plenty of ice to the pitcher. Refrigerate the lemonade for at least 30 minutes to allow the flavors to meld beautifully and ensure it’s perfectly chilled. Serve over ice, garnished with pineapple wedges, extra dragonfruit chunks, and fresh mint sprigs, if desired.
Notes
Choose ripe fruit for best flavor. Adjust sweetness to taste. Use freshly squeezed lemon juice. Store in an airtight pitcher in the refrigerator for 3-4 days. For quick chilling, place simple syrup saucepan in an ice bath.
